Co-op member Cyd had some ripe Hachiya persimmons from a generous neighbor. Instead of following the well-travelled road of adding orange, he veered and got creative by adding grapefruit. I tasted this butter, and it works beautifully. It is surprising, as so often grapefruit can over-power and make the resulting product too bitter, but in this case, the inherent sweetness of the ripe persimmons was balanced by that strong grapefruit note. Fuyu persimmons (the crisp- ripe ones) are pictured above, as that was in my fruit basket today. Cyd did use Hachiyas, which are only good when they are soft-ripe. Now we are hoping that generous neighbor joins the Co-op, as this is a winning flavor combo. Thanks, Cyd!
