Meyer lemon marmalade on oatcakes

Meyer lemon marmalade prepared using fresh whole Meyer lemons and sugar only.  The natural pectin found in the seeds and membranes is extracted and used to set the marmalade, so it uses more fruit and less sugar and intensifies that fruity fragrant essence 0f a fresh tree-ripened Meyer lemon.  The lemons were picked and the marmalade was canned in July 2011 by Susan, Linda and Jocelyn.
