We all do more entertaining and social celebrating around the holidays. Co-op members are using the marmalades in brussel sprouts glazes (Lee), roast pork sides (Angelo), roast beef condiments (Mary), dessert fillings (me) and ‘same old’ chicken (Jackie #1) zing, but I wanted to give you all even more ideas. (But wait, there’s more!) Try using marmalades as a cocktail or punch ingredient. For a Shakespeare in the park* supper I made a very successful summer wine sangria with some of our preserves and have also used our spiced oranges for mulled wine, but here are a few recipes developed by esteemed mixologists. When you think about it, marmalade has the essential sweet, sour, bitter and aromatic notes, all in a spoonful. So try any that appeal to you, and maybe develop your own then let me know what works. - For the tea:
- 1 quart water, just under a boil
- 1 PG Tips tea bag
- 1 sprig of fresh mint
- For the cocktail:
- 3 ounces PG Tips tea (as brewed above)
- 1/2 ounce lemon juice
- 1/2 ounce simple syrup
- barspoon of orange marmalade
- 2 ounces Bulleit bourbon
- garnish: lemon wedge (optional)
- In a resealable container or pitcher, add hot water, tea bag, and mint sprig. Let steep overnight.
- For the cocktail: Combine 3 ounces brewed tea, lemon juice, simple syrup, orange marmalade, and bourbon in a cocktail shaker. Shake without ice.
3. Fill a Collins glass with ice, pour cocktail (unstrained) into glass. Top with lemon wedge if desired.
This one is from cocktail pioneer and the creator of Class Magazine, Simon Difford. I think that Simon Difford is to the cocktail what Julia Child was to a roast chicken. Take a look at his magazine and blog. Brilliant!
4 spoon Orange marmalade 2 fl oz Bombay Original London dry gin ½ fl oz Freshly squeezed lemon juice
In case you have some of our Co-op Mission Fig Preserves around, I found this.
Mediteranean (sic) Lady Marmalade
6 cl Metaxa (4 tbsp)
3 cl fresh lemon juice (2 tbsp)
3 bar spoons fig jam (3 tsp)
dash egg white
Shake ingredients with ice cubes, strain into a cocktail glass, and garnish with a sprig of fresh rosemary. Co-op HQ, aka my front yard, is all rosemary, so help yourself!
Marmalade Martini, Food Network’s Marmalade Cocktail
For each drink, combine 3 ounces gin, 1 ounce dry vermouth, 1/2 ounce lemon juice and 1 tablespoon orange marmalade in a cocktail shaker with ice; shake well, then pour into a glass.
IngredientsRim a rocks glass with salt. Pour all the ingredients in a shaker, add ice, shake and pour into the rocks glass. Garnish with a lemon wheel.The Twisted Rivoli
InstructionsPour the Courvoisier VSOP, apricot brandy and dark cacao into a cocktail shaker before adding the marmalade. Stir briskly. Fill the shaker with ice cubes. Shake vigorously and strain into a Martini glass.
